A Vegetarian Chili Recipe

My best friend just had a baby and I decided to take her some food so she didn’t have to cook for a few days. She’s a vegetarian, and since we’re not, it’s been a bit of a challenge to come up with some dishes that reheat well and don’t contain any meat. After some searching, I came across this lentil chili recipe. I used vegetable bouillon cubes instead of beef ones to make it a try vegetarian meal. When it was done, I scooped out a small bowl for myself to taste this meatless chili. It was so yummy I immediately put on another pot for my own family.

I don’t have a lot of bean and lentil recipes that I use aside from the occasional pot of soup, but this chili was such a big hit that it will be on our meal plan regularly from now on. Who knew you could get a pot of chili with this much flavor without adding any meat. Makes me wonder what other yummy vegetarian meals are out there. I’m definitely going to experiment a little more with beans and such.
